Crafted in the Lazio hills at the foot of the Abruzzo National Park, Bettini pasta is made from 100% durum wheat semolina grown in the region, blended with pure spring water, shaped through traditional bronze dies, and slow-dried at low temperatures. The result is a pasta with a rough, sauce-gripping surface, exceptional bite and real depth of flavour.
Mezze Maniche — meaning 'half sleeves' — are shorter, wider rigatoni-style tubes with deep ridges. They're one of Rome's favourite pasta shapes, perfectly designed to hold thick, hearty sauces in every groove.
How to use it: The traditional choice for cacio e pepe or gricia. Also brilliant with a rich tomato and guanciale sauce or a slow-cooked vegetable ragu.
