Crafted in the Lazio hills at the foot of the Abruzzo National Park, Bettini pasta is made from 100% durum wheat semolina grown in the region, blended with pure spring water, shaped through traditional bronze dies, and slow-dried at low temperatures. The result is a pasta with a rough, sauce-gripping surface, exceptional bite and real depth of flavour.
Calamarata takes its name from its resemblance to rings of calamari — wide, round tubes cut into short sections. It's a distinctive Neapolitan pasta shape, bold in size and character, ideal for dishes where the pasta itself is part of the statement.
How to use it: The traditional pairing is with a seafood sauce — especially squid or mixed seafood — where the pasta mimics the calamari in the dish. Also excellent with a rich, slow-cooked pork or lamb ragù.
